Might be able to set an order before the draft that it picks from? though maybe thats a pro option that you have to pay for.
Yes can set an order before hand, and it will auto pick off that for you, or if you choose to not set it will draft auto off the ESPN rankings.

Draft is ready to be held next Saturday at 7:30pm, be warned it will probably take about 2 hours as we each have to make 26 selections to fill our squads (Normal draft is 1-1.5hrs for 16 picks), will set it to 90s per pick, but may drop it to 60s if we decide it isn't going fast enough.
Schedule will see everyone play their own division twice, and the out of division teams once. For this league the divisions will be randomly drawn at the end of the previous season. The two division winners will auto qualify for the playoffs as top 2 qualifiers, followed by the two "wildcards" can be from either division.

On your team page there is "Edit Pre-Draft Rankings" this ensures your rankings and will pick in that order the top player available, the other thing to change is "Edit AutoPick Strategy" on that one it sets up what sort of player you pick each round and you can set limits to how many of each you want etc.

Sounds like a good idea, don't worry the league has 3-4 teams who know the NFL, and have some fantasy experience, and the rest are guys with no idea at all, you should be fine.
And if you realise after the draft that your team looks like it'll be better in 2 years time you can start trying to trade away your "Great right now" players in exchange for future draft picks and our younger players who can help you win a title in a few years time.

Nope is going to be a draft. Had thought about an auction and salary caps etc, but it is just too hard to put into play, especially with inexperienced players

For example, Peterson is the top draft pick but if I wanted to pick McCoy above him, the only thing I can do Is demote Peterson from number 1 pick to 1455 pick. Is this correct or am I not seeing all the right buttons?

Yes it is used to choose picks. If you go after ordering it into "Autodraft Strategy" you can set it to a certain number of QBs to draft. It does try to fill team before drafting more, so it is unlikely to pick 3 early QBs. Though drafting multiple Def kickers not unusual.
